Warming Winter Wellness Soup

Even though winter is drawing to a close, we are still getting those cold mornings and there are still plenty of bugs going around!

This soup contains several ingredients that are natural remedies

  • Chilli – A decongestant (and it boosts metabolism)
  • Ginger – Anti-inflammatory
  • Garlic – Anti-viral
  • Sweet Potato – Anti-inflammatory
  • Goji Berries – Anti-oxidant

 

Ingredients:

  • 2 Sweet potatoes (diced)
  • 1 Red onion (sliced)
  • 1 Punnet shikati mushrooms
  • 2 handfuls of goji berries
  • 500ml vegetable stock
  • 1 chilli (chopped finely)
  • 4 cloves of garlic (crushed)
  • 1″ piece root ginger (grated)

Method:

  1. Place all the ingredients in a pan and brign to the boil.
  2. Simmer until soft and blend.
  3. Serve while hot.
